Butter Chicken with Rice Serves 10


2 kg Chicken thigh without bone

75gr Butter chicken sauce

40gr Butter

100gr Onion sliced

120gr Tomato paste

450ml Cream

150ml Water

1. Trim any excess fat from the chicken and cut into a dice. Place into a bowl and add Butter Chicken sauce. Mix well and leave to stand for 5-10 minutes.

2. Melt the butter and add the sliced onions, cook over a medium heat for 3-4 minutes.

3. Add the chicken and cook on a high heat and lightly brown.

4. Add the tomato paste, cream and water and simmer, stirring occasionally until the chicken is cooked, and sauce is thickened.

5. Serve with steamed rice.
